Del Nonno Soup

Ingredients:
500 g granddad's soup (soak for 12 hours), 200 g peeled tomatoes, 1 onion, 2 carrots, 1 celery, 1 bunch of Swiss chard, 2 potatoes, 2 courgettes, extra virgin olive oil and salt to taste.

Procedure:
First of all cut all the ingredients into small pieces, put the celery, carrot, onion, potatoes, chard and courgettes into a pot, then add the granddad soup (previously soaked for 12 hours), peeled tomatoes, salt and oil. Add water and simmer until the ingredients are fully cooked (approx. 90 minutes). Serve to taste with a sprinkling of Parmesan cheese.
