Montagna soup

Ingredients:
500 g mountain soup (no need to soak), 300 g peeled tomatoes, 100 g smoked bacon, pecorino cheese, 2 cloves of garlic, 1 red onion, parsley, thyme, basil, 1 litre meat stock, salt and pepper to taste, extra virgin olive oil to taste.

Procedure:
Chop the bacon and fry it in oil together with the chopped garlic and onion. Let it cook for 10 minutes, stirring constantly. We add the thyme, basil, parsley and chopped tomato. We add the mountain soup to toast it. Cook for about 30 minutes, adding hot water. Season with salt and pepper. Serve the soup warm seasoned with extra virgin olive oil and chilli pepper to taste.
